The “waiting noodle” restaurant takes 10 hours of effort, selling 500 bowls every night in Hai Phong

Average every day for a family Mr. Hai sold 400 – 500 bowls. At peak times, the whole family of 6 people, both sales and service, work tirelessly. The shop owner said that the shop does not want to expand its scale because of limited human resources. All processes must be done manually to ensure quality comes first.

The shop is open from 6-10 pm. One day, the shop ran out of items for only a few hours. When customers arrived, they had to “turn around” because there was no more noodles to enjoy. Many diners said that even though they had to wait a long time, sometimes up to half an hour, they still felt it was worth the time spent because they got to eat the famous delicious noodles.  

Ms. Nguyen Van (living on Ky Dong street) has been eating “waiting noodles” here since she was a child for about ten years now. This customer was impressed with the soft noodles and sweet broth without the taste of MSG. Particularly, the dumplings are made from minced shoulder meat and mixed with many ingredients, so they are fragrant and soft. 

The food has a delicious taste and is worth enjoying. The most crowded time is from 7:30 to 8 pm, so customers who want to eat must come early when the restaurant opens for sale,” Ms. Van shared.

Each bowl of “waiting noodles” costs 35,000 VND served with a strange sweet and sour chili sauce. If you want to enjoy additional dumplings or sausages, diners have to pay a few tens of thousands of VND more per serving. Diners who have eaten “waiting noodles” commented that this dish has a rich, sweet broth in harmony with soft, chewy noodles and cool green vegetables with a little aromatic grilled liver dumpling.
